Food Handling Modules
Development of The Nutrition Program undergraduate and graduate curricula will be revised to include didactic and experiential components. Development of five food-handling modules was begun in Summer 2009 and will be completed in Fall 2009. These modules will be implemented in Fall 2009 and Spring 2009 in the following classes: Management in Dietetics I and II, and Methods in Nutrition Education. The development of the curriculum will provide students with opportunities to increase their food handling and experience to better serve their future clients.
These are tentatively titled:
- Basic Food Safety
- Basic Food Handling
- Recipe Analysis
- Ingredient Substitution
- Food Demonstration.
